Cocoa butter is vegetable fat that is extracted from the cocoa bean. This natural ingredient helps fluidify (thin) couverture chocolate for use in spray guns and chocolate fountains. Cocoa butter in chocolate acts as a humidity barrier protecting from dampness. It also acts as a hardening agent in candies and confectionery.

Cocoa Butter may also be used in savoury dishes (ie for frying) and in the costmetics industry.
